Cashew Cheese Substitute

INGREDIENTS
1 cup raw cashews, soaked for 1 hour
1/4 cup filtered water
1/4 cup nutritional yeast
2 T lemon juice, from one fresh juiced lemon
2 cloves garlic
2 T white wine
sea salt and pepper to taste
optional can of Canallini, kidney, pinto or black beans, drained and rinsed

INSTRUCTIONS
Simply add all ingredients into your Vitamix or high speed blender and blend until thick and creamy. It will be the consistency of thawed or stirred cream cheese. This will further harden after it's been chilled. Adding beans may help spreadability; move them from main dish you are making such as Cannalini or kidney for Italian, or black or pinto for Mexican. Store in the refrigerator for up to 5-7 days.
