Waffles or Pancakes
Makes 9 6-1/2" waffles or 12 4" pancakes
1/4 C olive oil or butter
3 eggs
1/4 C honey - approximate, don't use measuring cup, a lot of it will stick to cup
1/4 C sugar
1/2 C whole wheat flour
1/2 C white flour
1/4 C oat bran
1/4 C almond or flaxseed meal
2 t baking powder
1/4 t baking soda
1/2 t salt
1/2 t cinnamon, optional
1/2 t nutmeg, optional
1 T lemon juice
1/2 t vanilla or almond extract
3/4 C milk
If using butter, melt in big bowl. If using oil, put in big bowl. Add eggs, honey and sugar and mix with beater for 2 minutes. Add dry ingredients and mix with spoon. Add lemon juice and extract and mix with spoon. Add milk a little bit at a time and mix with spoon to avoid lumping. Add additional flour or milk to get the consistency just barely not runny. Mix sparingly with mixer if lumpy.
For waffles:
Preheat waffle iron, set to 1/3. Spray. Mostly fill ladle and pour in to iron. Cook until light goes off.
For pancakes:
Preheat griddle or frying pan to medium. Partly fill ladle and pour to about the size of the turner. Cook for a couple of minutes until underside is light brown. Flip with turner. Cook until bottom side is light brown.
Serve with warmed maple syrup, raspberries, blackberries, blueberries, sliced strawberries and whipped cream.
