Zucchini Bread

3 eggs, or flax seed
1/2 cup canola oil
3/4 cup sugar
1t baking powder
1 cup whole wheat flour
1 cup white flour
1/2 cup oat bran
1 cup walnuts, chopped
2 summer squashes, shredded
Canola oil spray

Preheat oven to 350 degrees. In a large bowl, mix eggs, oil, sugar and baking powder. Mix in the rest of the ingredients. Spray 2 loaf pans with oil spray and pour ingredients in to each. Bake for approximately 45 minutes, until a toothpick comes out clean. Cool on cooling rack.
