Sourdough Bread

1 C sourdough starter in 2 C sealed container, refridgerated
1 C whole wheat flour
1 C white flour
Spray oil
Corn meal

Take starter out of fridge and put it in a large bowl. Fill container with 2C water, mixing the starter on the sides in to the water with a spoon. Heat for 33 seconds in the microwave. Pour in to bowl with starter. Add flours and stir. Let sit for one hour uncovered.

Knead the bread on a floured board. Place back in bowl. Cover and let stand for 45 minutes.

Spray oil in Dutch oven. Sprinkle corn meal on the bottom. Put dough in Dutch oven. Slice an X in the top of the loaf. Put cover on and place in oven at 100 degrees for 15 minutes.

Turn on oven to 400 degrees. Cook for 30 minutes. Remove cover. Insert remote thermometer and close oven. Bake until center is 180 degrees, about 20 more minutes.

Remove from oven. Place on cooling rack. Wait 5 minutes until serving.
