Lettuce Salad
Makes 4 servings.
Chopped lettuce — pre-mixed in a box or more fresh individual ingredients:
Base lettuce: 1 small head of green leaf lettuce, butter lettuce, Romaine lettuce, spinach or kale; not iceberg for more nutrition
Spicy lettuces: arugula, dandelion leaves, endive, escarole, green or purple cabbage, raddichio
Green onions, sliced perpendicularly to length
Red onions, chopped finely
Carrots, grated
Garbanzo or kidney beans, rinsed
Avocado, sliced
Cucumber, skins scored with fork and sliced thin
Mushrooms, sliced thin
Olives, sliced
Marinated artichoke hearts, chopped
Radishes, sliced thin
Cherry tomatoes sliced in half, or ripe heirloom tomatoes chopped
Extra virgin olive oil
Balsamic vinegar
Sunflower seeds, chopped almonds or chopped walnuts
Mix everything except the seeds or nuts in a big bowl with salad spoons. Serve in bowls and top with seeds or nuts.
The above is a savory salad. Fruit such as sliced grapes and blueberries can also be added.
