Home Made Tortillas
Makes 8 medium sized tortillas.
1C whole wheat flour
1C white flour
1t salt
4 T vegetable oil
1 C boiling water - boiling is key to rolling thin enough!
Use pastry blender to mix flours, salt and oil until crumbly, then add boiling water. Mix until just blended, then let cool.
Put 1/2 C flour on a cutting board. Fold 4 to 10 times until not sticky. Divide in to 8 balls. Generously flour both sides of each ball. Roll thin with rolling pin, making sure there is enough flour so it doesn't stick. Brown in hot non-stick pan lightly sprayed with oil for about 1 minute on the first side and about 30 seconds on a side until they just start to brown. Put on cooling rack for a few minutes.
