Baked Potato Slices
30 to 40 minutes preparation time. makes 6 servings.
Preheat oven to 375 degrees.
Wash 4 large or 6 medium russet, red or yukon gold potatoes. Slice them in half, then slice very thinly the other direction, shooting for potato chip thickness, but making sure they are all the same thickness. Consider using a thin slicing attachment to a classic Cuisinart.
Spray baking pan liberally with oil, then place potato slices on pan. Sprinkle with season salt and dried oregano flakes. Mix by hand to evenly distribute the spices. Then lay them all flat.
Bake in oven until they begin to brown, 20 to 30 minutes depending on thickness of slices. In a convection oven they probably don’t need to be flipped, but check to make sure the underside is also lightly browned and if not flip them and cook the other sides for a little longer.
Serve with BBQ sauce or guacamole.
