Artichokes
Each artichoke makes 2 servings.
Slice of artichoke stems and 1/2” of the top. Cut off thorns. Slice in half. Scoop out thistle center with paring knife or serrated grapefruit spoon.
Place in pot and add just enough water to cover them. Bring to boil and cook for about 15 minutes, until the centers are just starting to soften.
Serve with vegan mayonnaise and soy sauce mixture. Peel leaves off and dip them in sauce, then scrape the soft side of the leaves with your teeth. Compost the hard side of the leaves.
