Turkey Burgers
Makes 6 1/6 lb burgers. Can be stretched to 8 1/8 lb burgers.
1. Preheat griddle or large frying pan to medium.
2. Make patties:
1 lb. ground turkey
1 pkg onion soup mix
1 egg
3 T Worcestershire sauce
3/4 C bread crumbs
Coarsely mix together in bowl with spoon.
Finish mixing and form 6 patties by hand.
3. Spray oil on griddle or pan in circles where the patties will go, then cook patties. Cook for several minutes on each side, until browned and for turkey when cooked through.
4. Choose your bun:
Home made dinner bread: make 1/2 recipe of Dinner Bread buns. See Side Dishes section.
Whole wheat rolls, which usually come in packs of 6. You might want to form your burgers oblong to fit the rolls better.
Whole wheat hamburger buns, but they usually come in packs of 8 and aren’t very good for anything other than burgers.
5. Choose your toppings:
Warm:
Mushroom, onion and spinach compote: chop and saute with canola oil, cream sherry optional.
Hummus
Salsa
Cold:
BBQ sauce
Avocado
Mustard
Thinly sliced raw onions, preferably red or white
Lettuce, anything but iceberg so you get more nutrients esp. vitamin A
Serve with side veggie and baked potato slices.
