Thursday Soup
Preparation time about 1 hour. Makes 6 servings.
The goal is to cook as much of what your Community Supported Agriculture farm gives you.
Ingredients:
1/2 C brown rice, cubed potatoes or dried wheat berries
1 can pinto beans, or dried heirloom beans
1 onion, chopped
1 Anaheim pepper, chopped
1 T canola oil
1 lb. ground turkey or soy protein crumbles
2 large carrots, chopped
1 can diced tomatoes, or fresh tomatoes
leafy greens - spinach, kale or chard, chopped small
chili seasoning mix - packaged or make from scratch:
- 1 t ground cumin
- 1 t coriander
- 1 t chili powder
- 1 t oregano, or 1/4 C chopped fresh
1 t dried parsley, or fresh
Onion soup mix, optional
4 C vegetable broth
Plus chop up anything else you just got from your CSA that would go with the above, such as squash, sweet potatoes or fennel.
Directions:
1. Cook starch:
- Rice, 45 minutes
- Potatoes, 15 minutes
- Wheat berries, 30 minutes
2. Stir fry onions and pepper in oil on medium in soup pot until cartelized. Add protein and brown. Add the rest of ingredients and let simmer for 45 minutes. Combine with starch.
