Thai Curry over Rice
Preparation and cooking time approximately 45 minutes. Makes 6 servings.
Ingredients:
1 cup brown and wild rice
2T Canola oil
1 large yellow onion, finely chopped
1 Anaheim chili, finely chopped
1 yellow pepper, finely chopped
4 cloves garlic, minced
1 butternut squash, peeled and cubed
1 large sweet potato, peeled and cubed
Green leafy vegetable — Kale, chard or spinach, finely chopped
2 carrots, finely chopped
Juice from 2 limes
Basil
Curry sauce: either 11 oz bottle of Trader Joe's Thai Red Curry Sauce or make it from scratch per the following:
1 Tbsp red pepper sauce
1/2 tsp salt
1 tsp sugar
3/4 tsp pepper
3/4 tsp turmeric
3/4 tsp coriander
1/4 cup peanuts or cashews, chopped
1 can light coconut milk
Garbanzo beans, tofu, chicken or shrimp
Peanuts
Directions:
Boil rice and then simmer for approximately 45 minutes.
Sauté onion, chilis and garlic in oil until lightly browned. Add squash and sweet potatoes and cook 10 more minutes. Add leafy greens, carrots, basil and lime juice and cook for 5 minutes. Add curry sauce and beans and cook for 5 minutes. Place in serving bowl over rice and garnish with peanuts.
Variations:
Substitute rice with spaghetti pasta.
