Stroganoff
Makes 6 servings.
Ingredients:
12 oz wide whole wheat egg noodles
Canola oil
1 chopped onion
4 cloves garlic
8 oz mushrooms, sliced thin
1/4 C cream sherry
Leafy greens - kale, spinach or chard
1 lb leftover meaty protein, such as Beyond Meat Beyond Beef patties or leftover BBQ trip tip
1/2 t truffle salt
1/2 t black pepper
1/2 t white pepper
1/2 t Umami mushroom spice
1 cube vegetable boullion
1 t hamburger seasoning
Dash of Worcestershire sauce
Dollop of BBQ sauce
3 T flour
1 can coconut milk
Directions:
1. Cook egg noodles.
2. Sauce onions and garlic in olive oil until cartelized.
3. Add mushrooms and sherry and saute until brown.
4. Add greens, protein, spices and flour and cook for several minutes.
5. Add coconut milk and warm for just a minute.
6. Add noodles and serve.
