Shrimp Pasta with White Sauce

Preparation time 45 minutes. Makes 4 servings.

Ingredients:
8 oz pasta
1 Tbsp canola oil
1 onion, finely chopped
1/2 green bell pepper, finely chopped
1/2 red bell pepper, finely chopped
1 C mushrooms, finely chopped
1/2 lb green leafy vegetable - Kale, spinach or chard - finely chopped
4 T cooking sherry
2 t chicken bouillon
1 T butter
1 T corn starch
1 t paprika
1/4 t white pepper
1 can light coconut milk
1/2 lb raw shrimp, peeled and deveined on both sides

Directions:
1. Put on water to boil and cook pasta until al dente once the water has boiled.
2. Meanwhile, saute onions and bell peppers in oil, loosening browned bits with sherry until golden brown.
3. Add mushrooms and saute until golden.
4. Add everything else except the coconut milk and shrimp and stir until thick.
5. Add coconut milk and bring to a boil.
6. Add shrimp and cook until no longer opaque.
7. Combine pasta with mixture and serve.
