Salmon with Avocado and Olive Garnish

One piece of salmon fillet makes 2 servings.

Ingredients:
Salmon
Blackened Cajun seasoning
Garnish:
Avocado
Olives - green, Kalamata or black
Chives or green onions
Parsley or spinach
Olive oil
Lemon or lime juice
Salt
Pepper

Wash salmon and remove any bones. Sprinkle a light amount of blackened Cajun seasoning on the salmon.

Preheat griller or frying pan at medium heat. Spray griller with oil or put canola oil in frying pan.

Cook in griller, or covered in frying pan. If in a frying pan, flip after a few minutes. Cook until the center of the salmon barely cooks through and is opaque and no longer translucent, pink not red. Takes about 6 minutes in griller and 8 minutes in the frying pan.

Make garnish by finely chopping up all the vegetables and mixing the oil, lime juice, salt and pepper together.

Serve salmon with garnish on top with bread or rice and steamed veggies.
