Salmon Caesar Salad

Makes 2 servings.

Ingredients:
Salmon; 1/2 lb fresh or 1/4 lb smoked
Romaine or red leaf lettuce, coarsely chopped
Fresh basil, finely chopped
cherry tomatoes, sliced in half
Caesar dressing, see recipe in Other section
Shredded Parmesan cheese
Juice squeezed from 2 lemon quarters

Directions:

Grill salmon with Italian spices in a griller or frying pan.

Toss together lettuce, basil, tomatoes and dressing.

Put croutons, Parmesan cheese, lemon juice and salmon on top of salad. The salmon can be hot or cold.

Serve with garlic bread.

Alternatives:

Carnivorous: any other fish, shellfish or chicken. 

Vegetarian: substitute meat for 1/4 can per person of garbanzo beans, white beans and/or kidney beans.

Vegan: substitute meat per above, then substitute Caesar dressing for oil and balsamic vinegar, and Parmesan cheese with cashew and nutritional yeast based cheese substitute.

More vegetables: sliced avocado, finely chopped green or red onions, coarsely chopped spinach or kale, coarsely chopped marinated artichoke hearts, grated carrots, grated radishes, black or Kalamata olives, mushrooms.
