Pesto Pasta

Preparation and cooking time approximately 30 minutes. Makes 6 servings.

1. Boil water and make 12 oz of pasta.

2. Pulverize pesto sauce ingredients in classic Cuisinart, just long enough to make it thick but not so long that it gets watery:
1 can Cannellini beans, rinsed
1/2 cup cashews, soaked
1/4 cup walnuts
2 T nutritional yeast
1 bunch spinach, coarsely chopped
1 bunch fresh basil, stemmed and coarsely chopped
1/2 bunch fresh Italian parsley, stemmed and coarsely chopped
4 cloves garlic, pressed
Juice from 1/2 lemon, or 1 cup white wine, or 2 T vinegar
2 T onion powder
1 tsp salt
1/2 tsp black pepper

3. Warm pesto sauce in sauce pan.

4. Mix pasta and pesto sauce and add toppings:
1/4 C toasted pine nuts
Parmesan cheese
cherry tomatoes sliced in half
