Pad Thai
Makes 4 servings.
Ingredients:
8 oz Pad Thai noodles made with brown rice
Sesame oil, plain or with red pepper sauce
Onion
Anaheim pepper
Garlic
Ginger
Protein: shrimp, chicken, leftover turkey, eggs or tofu
Veggies to cook:
Bok Choy
Carrots
Broccoli, optional
Flat peas, optional
1/2 jar Pad Thai sauce
Toppings:
Green onions
1/2 bunch cilantro
Fresh lime
Bean sprouts
Peanuts
Sriracha, optional
Instructions:
Boil water to cook Pad Thai noodles.
Cut all vegetables and proteins (except for shrimp and eggs) in to thin slices.
Saute onion, Anaheim pepper, garlic and ginger in sesame oil until browned. Add protein, veggies to cook and Pad Thai sauce and stir fry until veggies are tender but still crisp.
Mix noodles in to stir fry mixture and serve separately from toppings.
