Morrocan Red Lentil Soup a la Linda
Makes 4 servings.
Ingredients:
1/4 lb. red lentils
1 small white onion chopped fine
3 carrots chopped fine
3 stalks of celery chopped fine
3 red potatoes chopped fine
green leafy vegetable chopped fine - spinach, kale or chard
1/2 T olive oil
1/2 T vegetable boullion
1 tsp chili powder
3/4 tsp ground coriander
1/2 tsp turmeric
1/2 tsp pepper
1 tsp cumin
1/4 tsp cinnamon
1/8 tsp cayenne
1/4 tsp cloves
1/2 tsp cardamon
4 cups water
Soak lentils for 1 hour. Drain this water after soaking. In a heavy saucepan, cook the olive oil
and onions over medium heat until golden. Ad celery. Then add the potatoes, carrots and all of the spices and cook for 5 minutes, stirring. Stir in
lentils and water. Simmer on low for 40 minutes.
