Jambalaya
Preparation time 1/2 hour for white rice or 1 hour for brown rice. Makes 5 servings.
Ingredients:
1 C rice and flavor mix - either 8 oz Zatarain’s Jambalaya mix (white rice) or from scratch:
1 C brown rice
flavor mix:
1 C fresh parsley
1/2 C fresh thyme
fresh oregano
1/2 t black pepper
1/2 t cumin
1/2 t coriander
1/2 t mustard
1/2 t white pepper
1/2 t paprika
1/2 t celery salt
1/2 t onion powder
1/2 t garlic powder
1/8 t cayenne pepper
1 onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 Anaheim pepper, finely chopped
4 cloves garlic, minced
1 T Canola oil
1 bunch leafy greens - kale, spinach, chard or collared greens, finely chopped
Tomatillos, optional
Protein: select from
1 package Open Nature Fully Cooked Smoked Andouille Chicken Sausage, sliced
1 lb shrimp, shelled and deveined
Directions:
Cook rice and flavor mix in a pot. Use only 2 cups of water instead of 2-1/2 cups since vegetables are wet and will add moisture.
In a large skillet, brown onions, peppers, and garlic in oil until browned. Add green leafy vegetables and optionally tomatillos. Add protein and make sure if it is shrimp make sure it is cooked through. Serve with a vegetable side dish.
