Falafel in Pita Bread
Preparation and cooking time approximately 45 minutes. Makes 6 servings.
Ingredients:
Falafel:
1 small onion, coarsely chopped
1/2 bell pepper, washed and coarsely chopped
4 cloves garlic, peeled and pressed
1/2 cup Italian parsley, washed and stemmed
1/2 cup cilantro, washed and stemmed
Juice from 1 lemon
3 T tahini puree, fully mixed
2 cans chickpeas, drained and rinsed
1-1/2 T+ whole wheat flour
1 t salt
2 t cumin
1 t coriander
1/4 t black pepper
1/4 t cayenne pepper
3/4 t turmeric
Pinch of ground cardamom
Spray oil
1 package of 4 fresh whole wheat pita breads
Toppings:
Hummus
Lettuce, washed and finely chopped
Tomato, washed and finely chopped
Green onions, washed and thinly sliced
Cucumber, washed and thinly sliced
Fresh dill
Directions:
Heat griddle and spray with oil. In a large bowl, put 1 can chickpeas and the rest of falafel ingredients in and stir. Then put in food processor, until rough like couscous, not too long that it gets smooth like hummus. Mash second can of chickpeas in bowl, then stir in food processor contents. Add just enough flour to make sticky so it holds a patty shape. Form in to 12 patties and cook on skillet. Cook until golden brown, about 5 minutes on each side. Meanwhile, lightly bake pita breads until warm. Place cooked patties and toppings in pita breads. Serve on plates with a side of greens.
