Fajitas
Makes 4 servings.
Refried black or pinto beans
1 T canola oil
Onion, sliced in strips
Anaheim pepper, sliced in strips
Bell pepper, sliced in strips
Green leafy vegetable - kale, spinach or chard
Spice mix - alternatively purchased taco seasoning mix:
1/2 t Cumin
1/2 t Paprika
1/2 t Coriander
1/2 t Salt
1 T Chili powder
1/8 t black pepper
1 t sugar
1/2 t chili lime salt
1/8 t chipotle seasoning
1 T onion powder
Lime juice from 1 lime
Medium sized whole wheat tortillas
lettuce, chopped
Tomato, diced
Avocado, sliced
Salsa
Heat refried beans.
Saute onions and Anaheim pepper in canola oil until cartelized. Add bell pepper, green leafy vegetable and spices and sauce until just softening.
Warm tortillas in toaster oven.
Serve refried beans and sauce mixture rolled in tortillas topped with lettuce, tomatoes, avocado and salsa.
