Chinese Stir Fry over Rice or Noodles
Preparation and cooking time approximately 1 hour. Makes 6 servings.
Ingredients:
12 oz long whole grain pasta or 1 C brown rice
2T toasted sesame oil
3T soy sauce
3T rice wine vinegar
1/2 t black pepper
1T corn starch
1/2 large head of bok choy or cabbage, finely chopped
4 green onions, julienned
2 large carrots, julienned
1 head broccoli,stem julienned, flowers cut in to 1 inch spheres
Baby Bella or Crimini mushrooms, thinly sliced
Green leafy vegetable, finely chopped - kale, spinach or chard
4 cloves garlic, peeled and pressed
4 oz bean sprouts, coarsely chopped
8 oz flat peas, washed, stemmed and cut in half, optional
8 oz fresh green peas
3/4 cup cashews
2 T sesame seeds
Directions:
Prepare pasta or rice.
Mix oil, soy sauce, vinegar, black pepper and corn starch together in a jar. In a large frying pan, stir fry all the vegetables except the cashews, adding the liquid mixture. Cook until vegetables begin to wilt. Add cashews and sesame seeds in only for the last couple of minutes so they are warmed but not softened. Serve on top of pasta or rice.
