Chili

Makes 6 servings.

Ingredients:
Black or pinto beans, dried or canned
1 cup quinoa or dried wheat berries
1 T canola oil
1 onion, chopped
1 Anaheim chili, chopped
1 bell pepper, chopped
1 lb soy based protein crumbles, such as Pure Farmland; optionally ground turkey
2 cups leafy greens, chopped — kale, chard, spinach
2 cans diced tomatoes
Chili spice mix, bought premade or made from scratch:
2 t ground chili
1/8 t chipotle and roasted garlic seasoning mix
1/2 t black pepper
2 t cumin
1 t coriander
1 t garlic powder
1 t chili lime season salt
2 vegetable bullion cubes
1 T sugar

Directions:
If using dried beans and/or dried wheat berries, bring to a boil then turn to low and let them cook for 2 hours.
Rinse beans and wheat berries thoroughly.
Brown onion, Anaheim chili and bell peppers in oil.
Add protein crumbles or turkey and brown.
Add the rest of the ingredients except for the beans and simmer for 20 to 40 minutes.
Add beans and warm for 5 minutes.
