Chicken Mushroom Couscous

Preparation time about 45 minutes. Makes 6 servings.

Ingredients:
2 T canola oil
1 pound skinless, boneless chicken thighs, trimmed of fat and chopped in to bite sized pieces
1 large onion. finely chopped
12 ounces mushrooms, thinly sliced
1 t boullion
1 T butter (optional)
1-1/2 cups couscous
Sauce:
3 tablespoons dry sherry
2 tablespoons soy sauce
4 cloves garlic
2 teaspoons cornstarch
1/8 teaspoon ground red pepper
1 T sugar
optional:
1 t Umani mushroom spice
1/4 t truffle salt
1 t red pepper sauce
fresh ginger

Directions:

1. Saute chicken in canola oil in pan until cooked through.

2. Add onion and mushrooms and cook until onions are caramelized.

3. Meanwhile in a separate pot boil 1-1/2 cup water, boullion, and optional butter. Add couscous, reboil, then turn off heat and let stand 5 minutes.

4. Add sauce ingredients to chicken, onion and mushroom mixture and cook until it bubbles.

5. Fluff couscous with a fork, then add to pan and mix with rest of ingredients.
