Chicken Cacciatore
Preparation time 2.5 hours. Makes 8 servings.
Ingredients:
1 T oil
1 onion, chopped
1 bell pepper, chopped
2 T Italian seasoning - oregano, thyme, basil and tarragon
1 t garlic salt
1 t onion powder
1/2 t black pepper
1/2 t coriander
1 t paprika
1 vegetable bouillon cube
Thyme
Tarragon
1 t seasoned salt or onion salt
1 lb boneless skinless chicken thighs
2 large fresh tomatoes chopped, or 2 cans of diced tomatoes, or one can of pasta sauce
1 lb pasta
Parmesan cheese
Directions:
Preheat oven to 300 degrees.
In an oven safe pan with lid, put in the oil, onion, bell pepper and spices; then the chicken; then pour the tomatoes or sauce on top to cover everything. Put on lid and put oven. Cook for 2 to 3 hours.
Cook pasta separately on stove.
Serve oven mixture over pasta and top with parmesan cheese. Include a side veggie.
