Guacamole

Never makes enough.

Cut 2 large barely ripened avocados in half. Carefully remove seed by sticking it with the knife and then pulling it out, but don’t cut yourself. Slice up the avocado halves in their skins, then scoop out in to a bowl with a soup spoon. Mash with a masher.

Add about 1/2 cup of salsa or guacamole seasoning mix. Stir with spoon.

Serve with Trader Joes Veggie and Flaxseed Tortilla Chips, on top of burger patties, or with baked potato slices.
